　　The second step is to mince the meat, mushrooms and shnmps till they are mixed in a paste. Add some spice such as ginger and onion and stir them evenly.

　　The third step is to make the wrappings. Roll the dough with a round stick into small round pieces of wrappings, each two inches in diameter.

　　The fourth step is to put the filling in the middle of a wrapping. Then press the wrapping tight and a jiaozi is ready. When you have made enough Jiaozi, the next step is to boil them.

　　That is the last step. Put a pot of water on the stove. When the water is boiling, put the Jiaozi one by one into the water and cover the pot. When steam comes out, add more cold water and when it boils again add cold water a second time. When you see the Jiaozi floating in boiling water, you can put them in bowls or plates, get the chopsticks and be ready to eat.

　　An alarming fact about this craze is that most students pursue graduate studies not out of their voluntary will. Faced with the harsh reality in the employment market, which is forever looking for graduates with higher degrees, many college graduates find going to graduate schools is a good way to avoid unemployment and to enhance one’s competitiveness in future job hunting.

　　However, without that voluntary initiative, most students who do enter graduate schools are not motivated. For them, the only thing that ultimately counts is the degree or the diploma which they expect could give them an upper hand against other job hunters. As to the actual substance of their graduate studies, it’s not a big deal for them, as long as it leads to that degree or diploma. During ancient times, when the earth enjoyed a very warm and moist climate, the land was covered with large forests and big plants. As time went on, the ground changed and began to sink. These enormous quantities oftrees and vegetable matter were covered by a deposit of sand and clay. This layer of sand and clay pressed upon the layer beneath and prevented the contact with air. These trees and plants succummed to the pressure and changed their appearance.

　　Generation after generation, as the ground kept gradually sinking, another layer of sand and clay was deposited above the layers already formed. A great pressure was thus exerted and the peat was changed into the black and brittle substance which is known as coal.

　　From the formation of coal, I see that the coal bas the same character as the pine trees in winter. The pines remain green when they are covered with snow. The coal remains of service to mankind after being burted underground for years and years.
